Olive theme, bird cage & such - A wedding to talk about

September has always been a wedding season and I have my share of creating wedding cakes! This was a last minute order and thank god, the customer was easy going. He just wanted a cake to cut and if possible, to have the theme something along the line of their wedding card which has doves, bird cage and lots of olive green.

As this was a less than 1 week notice cake and with the rain, everything has to be kept simple. Flowers were made within 2 days and I had to bring them to my work place to dry them.. hehehe.. first it was a bouquet of real flowers.. and now trays of what looks like real flowers.. hahahaha.. what my boss must be thinking! Anyway, he knows this is my hobby from the time I went for my interview..

So, with flowers drying in my office, concept brewing in my head, I worked on this design with gusto on the day before delivery.. Thank God it didnt rain on the day and I had an easy time working on the 3 layers...

Oh yes, this is the groom's favorite marbled butter cake with fondant. As time was limited, there was no time to get the marzipan layer done.. instead, a layer of Italian buttercream was used which was a bit tricky...

All 3 tier weigh in at 7.85kg and this was sold for RM950. An extra charge was added on for the last minute request as I need to run to the stores for all the little essential items..

Macaroons - A pretty gift, A perfect addiction!

Macaroons are something I make every school holidays when I was young.... yes, in those bygone days, we children never had much to amuse ourselves.. it was either books, handiwork of some sort, boardgames or visits to friends' house if mama permits. Yes, those were very boring times but we survived and we learn to be creative! Hahahaha....

Anyway, back to my macaroons, yes, I was 14 years old when I learnt to make this.. it was fairly simply and since there was always egg whites in the fridge and with recipe in hand, I set out to make this.. my first attempt was a failure.. partly because I didnt use the machine and instead, whisked the egg whites with the ever famous old fashion rotary whisk!! hahahhaa... I remembered I was miserable and didnt quite know what my mama would say when she saw the failed macaroons... well, I was more afraid that she would scold me for wasting her ingredients. I dont come from a rich family and every ingredient are never to be wasted.. till today, I have this habit of not wasting anything...

When my mama got home from work, saw the pile of very failed macaroons and me all nervous, she poked at the macaroons and told me to try again. Boy! was I relieved... and that night, she taught me how to operate the mixer.. I am still using the same mixer today... Things were made to last in those era..

The next day, I try again and this time, my mama called from work to remind me to check the oven temperature and make sure I got it right.... and viola!! my first batch of macaroons!! my first baking adventure and I conquered... the sense of achievement and success stuck to me forever... I loved it and will always love it. Hehehe..

So, for years, whenever I need to have a present real quick, I will always whip up a batch of macaroons. Although many people are not familiar with macaroons, they are very willing to try the ones that I give them. Maybe it is because I am a bit fanciful.. I usually add on colors and flavoring to make it attractive and once these people start.. hehehehe... they usually dont stop. Not even those who claim macaroons are too sweet! Ahhh... then again, what is life without a little bit of sugar once in awhile? Life is about living it and at time dangerously can be justified.. with a macaroon!Hahahaha..

Recently, I proposed this as a gift for a wedding that I did, the bride was seduced by this.... and so were all her guests! Hahahaa... the bride called from her honeymoon destination just to tell me that she will need to order another 20 or so more of this gifts as most of her guests are requesting for it...

And oh yes!! the people at my office who did try these are also enquiring about this.. and for that, I made some today!! These are really great with a cup of coffee.. The light, melt in the mouth texture simply is divine and the contrasting taste teasing the taste bud.. are the ingredients that make this so addictive...

So, are you keen to try something addictive like these macaroons?? Hehehe.. these are packed in 100gm and sold for RM35.. there are plenty for 100gm... and many cuppa time will be a smiling time...

Peonies in full bloom..A wedding to remember..

Wedding... That was what I was busy with these past weeks. Of course, I had my fair share of excitement from my jelly mooncakes too but it was the wedding that kept me busy...

The bride came to see me months ago to explain in detail as to what she would like to have. She was very precise with her flowers. It has to be peonies.. Red peonies for her wedding cake. She also wanted cupcakes and gifts for her guests. Hehehehe.. she wanted to pamper them!

Her main wedding cake was made of traditional fruitcake with all the works.. marzipan, fondant and royal icing! The cake was drenched in rum and brandy too because the bride plan to follow the tradition of keeping the top most tier for her first born's full moon or in some cases, Christening.

The peonies was the hardest bit.. lots of patience.. lots of "equipment" Each petal was made separately, dried in individual bowl to give it the "closing in" like a petal. Each step of making this flower was challenging with our horrible weather. The humidity simply made it IMPOSSIBLE! Hahahaha..

On the day of assembling the main wedding cake, it rained horses and elephants and the fondant was simply difficult to work with. It was sticky and "melting" even with the air cond running.. Sigh.. at that moment, I really wanted to cry.. Hahahahaha! Finally, when I got the cake nicely covered and excitedly ready to "plant" the peonies, I was shocked to find the red on the peonies were staining the fondant.. Arrrgggghhh!!! I worked the night repairing this... and the continuous rain didnt help a bit...

As for these lovely cupcakes.. it took me a total of 3 days to work on the peonies.. a total of 210 flowers in assorted colors.. each color indicating the flavor inside these cupcakes. These are twister cupcakes, pink indicating strawberry compote filling, orange for lemon curd filling and red saying chocolate cream.

For some reason, these cupcakes were the best I have made.. simply fluffy with a good bite.. just like how I like my cakes to be.. with the filling, it was more than awesome.. yes, my monster polished off 4 cupcakes in 1 sitting!! I had to push her out of my baking room!! Hahahahaha... The challenge I had with these cupcakes was the rain again!! Hahahaha.. it rained just before I went to sleep for the first time after 48 hours.. Sigh.. and I had to very quickly move the cupcakes back to my baking room to enjoy the air cond to keep the flowers "up"... with such high humidity, the flowers will just flopped and melt onto the cupcake.. 3D it shall not be! Hahaha..

Oh.. these are the gifts the bride wanted to lavish on her guests.. something sweet, which are macaroons.. raspberry macaroons to be precised.. something aromatic which are a combination of roasted almond toss in sugar, cashew nuts, walnuts and macadamia...something addictive, cranberries orange cookies! All the must have in a marriage.. something sweet, something aromatic, something addictive to each other! Hahahaha... and yes, it took me a few pair of hands to get all the gifts nicely ribboned, tie with a pretty bow and stick on a love message... Aaahh.. pretty!

It was a busy 3 weeks for me to get everything ready for this wedding and although there were crazy moments, stressful and tiring days.. it all turned out great! I love weddings.. do you?? Hehehehehe... my best wishes to Wei Lyn and Vincent.. may you both be blessed with great patience, lots of love and understanding to see each other thru....
