It has been a macaroon week!!



I have been having a macaroon week.. creating and coming up with new flavors and selling them. It has been exciting and yet very frustrating. Exciting because the creations are different from what can be found outside and around. Frustrating because sometimes, the macaroons fail flat on my face!! I am not sure.. it could be weather, with the rain pouring like horses from sky, the macaroons were not able to create "skin" before baking.. Sigh.. after awhile, I just put off making macaroons until the weather is sunny..


Yes, it cost quite a bit to fail as the almonds are extremely expensive lately. So, after many failures, I have been improved! Hehehehee... Happy Macaroons everyone!!

Macaroons - Cendol



I have always wanted to create something local for macaroons.... and since I have bushes of pandan in my garden and they have been singing out to me to use them, I took up this challenge. It was not easy to create pandan macaroons with real pandan juice. Macaroons are delicate thing.. everything has to be measured accurately and adding pandan juice will affect the balance and everything has to be re-created.. after many many tries.. many many thrown aways.. I got it!!


Hehehehe.. yes, I could always use those ever readily available pandan paste but that wouldnt be nice. Pandan is something you need to use the original.. the paste or essence dont do justice and for some, it's rather horrible. As such, my pandan macaroons dont have the dark green color.. As for the filling.. hehehe.. this is my best creation.. gula melaka butter cream is not hard to make but I decided to create a bit of difference.. salted gula melaka! The balance of saltiness with sweetness was tricky but after a few tries, I got it! Hehehehehe..


Pairing these two, I created something awesome! Hehehehe.. I tested this on non-macaroons eater and after much persuasion, I got them to try and they love it!! They even took more than 2.. so... Yay!! yay!! yay!!..

Macaroons - Carribean Queen



oh... this has been a carribean year! First taste of this coconut and lime combo in London has excite me to create another yummy variant.. I had the calypso jelly mooncakes for the mid autumn festival and now, a coconut & lime variant macaroons. This is a wooo hoooo ... coconut is a rather rich flavor ingredient.. and in macaroons, it add on to the aroma... making it addictive. However, one cannot have many.. it gets too rich..hence, a filling that will compliment yet contrast the coconut macaroons is needed. What can it be besides lime.. hehehehe..


One has to take a bite to experience the magic of Carribean Queen.. I wont try to describe this.. you gotta bite into it this to experience the Queen... RM4 each with a minimum order of 20pcs.

Macaroons - Black Sesame, Black Magic!





Havent been making this for awhile already.. Anyway, was having a bowl of delicious black sesame "tong sui" the other day with the rain pouring outside and suddenly, a thought came to my mind.. using black sesame to make macaroons since there are so many medical benefits with black sesame.


The smell and taste of black sesame is very strong and I personaly like it. Black sesame has a very warm and inviting taste to it and it helps balance off the sweetness of macaroons. I pair this up with a very light chocolate ganache that is made with dark chocolate.. heh! heh! heh!..The taste is like.. magic!Wingardium Leviosa!

Macaroons - A pretty gift, A perfect addiction!



Macaroons are something I make every school holidays when I was young.... yes, in those bygone days, we children never had much to amuse ourselves.. it was either books, handiwork of some sort, boardgames or visits to friends' house if mama permits. Yes, those were very boring times but we survived and we learn to be creative! Hahahaha....

Anyway, back to my macaroons, yes, I was 14 years old when I learnt to make this.. it was fairly simply and since there was always egg whites in the fridge and with recipe in hand, I set out to make this.. my first attempt was a failure.. partly because I didnt use the machine and instead, whisked the egg whites with the ever famous old fashion rotary whisk!! hahahhaa... I remembered I was miserable and didnt quite know what my mama would say when she saw the failed macaroons... well, I was more afraid that she would scold me for wasting her ingredients. I dont come from a rich family and every ingredient are never to be wasted.. till today, I have this habit of not wasting anything...

When my mama got home from work, saw the pile of very failed macaroons and me all nervous, she poked at the macaroons and told me to try again. Boy! was I relieved... and that night, she taught me how to operate the mixer.. I am still using the same mixer today... Things were made to last in those era..

The next day, I try again and this time, my mama called from work to remind me to check the oven temperature and make sure I got it right.... and viola!! my first batch of macaroons!! my first baking adventure and I conquered... the sense of achievement and success stuck to me forever... I loved it and will always love it. Hehehe..

So, for years, whenever I need to have a present real quick, I will always whip up a batch of macaroons. Although many people are not familiar with macaroons, they are very willing to try the ones that I give them. Maybe it is because I am a bit fanciful.. I usually add on colors and flavoring to make it attractive and once these people start.. hehehehe... they usually dont stop. Not even those who claim macaroons are too sweet! Ahhh... then again, what is life without a little bit of sugar once in awhile? Life is about living it and at time dangerously can be justified.. with a macaroon!Hahahaha..

Recently, I proposed this as a gift for a wedding that I did, the bride was seduced by this.... and so were all her guests! Hahahaa... the bride called from her honeymoon destination just to tell me that she will need to order another 20 or so more of this gifts as most of her guests are requesting for it...

And oh yes!! the people at my office who did try these are also enquiring about this.. and for that, I made some today!! These are really great with a cup of coffee.. The light, melt in the mouth texture simply is divine and the contrasting taste teasing the taste bud.. are the ingredients that make this so addictive...

Eton Mess!



I have heard of this dessert but never seem to get to try it every time I go to London until my recent trip. Hehehe.. ok, the history of this came from the fact that boys from Eton, the prestigious school for the elite, eat their meringue and cream dessert by mixing everything up into a big pile of mess. After awhile, everyone follow suit because yes, it taste better to eat this mess than the conventional way... Hehehehe.. henceforth, this is known as Eton Mess.

This is basically a meringue that is crispy on the outside but chewy and sticky on the inside dressed up with a generous dollop of cream that is luxurious, creamy and velvety. All these are topped with a generous portion of delicious strawberries that are juicy and succulent paired up with balsamic vinegar. It is suppose to look like a big pile of mess.... dont attempt to make it look anything else... that is the beauty!

To eat, you just need to dig in and each spoonful of this delicious awesome dessert will give you something crispy and smooth, something chewy and sticky, something luxurious and creamy, something sweet and tangy, something succulent and juicy, something to die for.. something that will keep you digging in!!

This is most definitely an awesome dessert.. it is worth every single sinful calories.. it's what life is about! Fun and happiness in every spoonful!! Try this!! Try it even if you dont like sweet stuff!! Nothing makes you feel happy like Eton Mess.

French Macarons - Yuzu Mania!





Yuzu is one of the funky flavoring I got from my recent trip down south... and the smell is simply divine! I pair yuzu with a delightful tangy orange cream and the result is LURVE!! Hehehe.. maybe it's just me.. citrus and me always fall in lurve..

Raspberry & Cream.....Jewels!




Remember I said that I will be creating a lot of new flavors once I get my hands on these yummy new flavors from across the little sea?? Hehehehe.. so, here we go.. This is my first creation... Raspberry & Cream...


This is one flavor that I have always wanted to have but couldnt find it over this land and when I found it across the little sea down south, I grab it! Hehe... the flavoring paste smells simply heavenly.. very natural and the best part is that it doesnt color, so, I can actually add my own coloring. Hehehehe.. Anyway, I am very cautious about flavoring..they are unpredictable!! They can smell heavenly nice and sweet but when you add them into your food, it might just turn into something else! I think it's all about chemistry... hmmm.. Anyway, I only wanted a hint of the flavor so, I was careful not to add too much... a slight hint will entice and tempt the palate.. but a strong dose will just remind the mind of cough mixture! Hehehee..


So, these little delicate morsel of macarons are delicately flavored and paired with rich and creamy cream cheese frosting with a twist! A little lemon is added to give it an addictive edge and a hidden treasure of raspberry jelly is added to give it a jewel effect.

Cacao & Orange Daiquiri - A Refreshing French Macaron Affair




I wanted something exciting with my chocolate macarons.. I wanted something that is earth shattering! Hehehe.. at first, I wanted to pair these chocolate macarons with something unusual like chilies..yes, you heard me.. chilies. It's a rage in europe!! chilies and chocolates are the most happening thing since platform shoes... hehehe.. but since I was out of chilies and have yet to do my little research on what chilies to use, I ransacked my fridge for something I could use to make the cream and lo and behold!! I saw something I know it will give my chocolate macarons some excitement...


It is an orange.. the skin was so orange and fragrant and I know the fruit is juicy with the right balance of sweetness and tanginess.. I also know that orange and chocolate is like day and night but they are meant for each other! Hahahaha.. so, off I went to create an orange daiquiri cream.. it wasnt easy.. I had to balance the consitency with the sweetness and tanginess.. I like it really tangy.. really citrusy orange.. not just flat out sweet.. but with a balance of sweetness. So, after an hour of mixing.. I got this cream... a cream cheese base flavored with a very zesty and citrusy orange flavor... Delicious!


And together.. it is refreshing and delicious! Together, they make a happy pair.. hehehehe.. again, such pair are addictive... at RM3.50 each for a minimum order of 20!! Yay!!

Cacao & Hazelnut Cream.. A Dark French Macaron Affair




Yes... if you are thinking that this is rich and dangerously yummy, you are right! I think that Chocolate & Hazelnut always work.. it's a safe combination.. and sometimes, safe is good.. hehehe..

Rose & Lime - A local french macaron Affair




This!! This is addictive! This is an awesome combination... Didnt I say Rose is a very very versatile flavor.. This reminds me of a local love affair.. a marriage between something english like a rose with something local like lime. The lime cream is a self created cream.. hehehe.. using my lime curd and home made buttercream... the taste is exciting, heady and addictive... and together with Rose, they make a pair of happy couple! Hehehe.. and yes, that dark pink streak was added intentionally.. to make it sexy of course!

Rose & Chocolate - A French Macarons affair...




Ok.. this is not one of my best creation.. I am not sure if it is the egg whites or is it the weather.. it was extremely dry and hot yesterday, so, perhaps that could the reason for this batch of Rose macarons not turning out the way I wanted them to. Sigh.. one cant be perfect..


Anyway, I will try this again.. because I like Rose.. I like the color and flavor.. I think Rose is very versatile.. it can be paired up with a lot of things and still maintain its signature without overpowering its partner... Just like this creation.. I paired it up with a velvety chocolate ganache flavored with rum.... the taste is simply DIVINE!! The rose flavor is delicate and it compliments the strong and smooth taste of chocolate ganache with rum..

I see GREEN!!!... A box of french macaroons...




Hehehehe.. this is for a new mama who just had a baby girl. The common practise of confinement practised by Asians requires one to abstain from some food as it is believed to be bad for health especially to a new mama who is said to be weak from childbirth and strain of having a new baby... So, one can imagine the limited choices of food a new mama can take and after a week or two, the new mama is bound to crave for something special... Hehehe.. within the limits of food allowed for confinement of course! So, when I was commissioned to make something nice for a new mama, I came up with macaroons...


This gift consist of a mixture of pistachios macaroons and Zesty Suzzy Lime macaroons and it was sold for RM80... I am sure the new mama will be going.. "woo hoooo!!!!" Hehehe..

I see GREEN!!! ... Pistachios & Chocolate..




I love the color green!! Do you? What is your favorite color??


I have always found green to be a very pleasing color.. maybe that's the reason why I always like nature.. my house must always have a garden, no matter how small it is.. there must be grass in my garden, there must lots of green in all sorts of different shades in my garden.. Green just make me really happy!! Even when I am sad, the color green never fail to lift up my spirit.. never fail to give me hope... Hehehehe... Green is my color of happiness...


So, when I was commissioned to make a batch of french macaroons for my customer who wanted them as gifts to a new mama who is in confinement, I boldly made them in green... hehehe.... I substituted the usual ground almonds with pistachios..(yes, I have to blend them up a few times to get that powder fine texture) for these macaroons and used a rich and velvety chocolate ganache for the filling.. The new mama is so going to feel pampered and special.. hehehe..


These were sold for RM4.00 each with a minimum of 20 pieces......

I see GREEN!!... Zesty Suzzy Lime Macaroons





I love lime...anything to do with lime.. I love the zesty and out of this world smell.. I love the tartness! It brings out flavors in anything that is sweet or savory.. A twist of lime in sardines can change the whole taste of something boring and fishy like sardine into something appetizing and enticing. Ask that fussy eater in my house.. she will tell you.."dont forget to add lime in the sardines!"


Anyway, I have been wanting to do this for the longest time but somehow never got the will to lift my lazy ass off to actually do it!.. Sigh.. procrastination is my biggest problem... So, yesterday, as I was walking to the kitchen, I looked at the bags of lime and could just hear them snickering at me.."you lazy bum... you are just too lazy to come over to give us some whacking and bashing.." and that was it! I took the challenge and come up with this....


These french macaroons are just macaroons... until the zesty lime curd is added.. and voila! the macaroons are transformed from plain to something that is consumingly addictive. The lime flavor gives it an addictive taste as it blends well with the sweetness of the macaroons.. The smoothness of the curd simply makes a startling contrast with the macaroons.. crispy and chewy from the macaroons combine with the smooth and rich but yet tangy taste from the lime curd... igniting a sense of love hate, storm and calm in you..... Aaaaahhh..
