A Tart Affair

This is good on hot hot days when you just dont feel like eating anything. Hehehehe.. Made this impromptu and was surprised by the taste! The mangoes were succulent and juicy but firm and seductive while the blueberries were just awesome! Never thought that blueberries are mangoes best friends.. Anyways..

The pastry was melt in the mouth which I love with a not too rich custard filling. Yes, in such heat, you dont want to eat anything that is rich... light but not too light is good and that's the custard I made...

So, overall, I gobbled these up with 2 girlfriends and was rather sad we didnt have more to gobble. But anyhow, will be making more of these and plan to sell them for RM8.50 each. with a minimum order of 6.

Summer Treats - Apricot Tart

Hahahaha... today is Boxing Day and I have posted something about Summer??? The story is that effective yesterday, the weather has changed drastically. Oh yes, just within one day, the weather has gone from rainy, cool and cloudy to bright sun, windy, hot and dry.... Ohh.. yes, a sure sign of Chinese New Year is fast approaching. Such weather always reminds me of that and Summer... Not my favorite weather though...

Anyway, yesterday, I visited this new hip supermarket and saw some beautiful apricots and instantly I was reminded of this TV commercial I saw when I was in London... Everytime I miss London badly, I will watch these commercials and smile.. hahahaha.. some people sure know how to make good commericals! So, without hesitation, even with sky high price for apricots, I bought them and made myself some apricot tarts.. Oooo.. they are soooo sooo sooo soo good!!

The pastry is crispy and buttery.. delicious with the frangipane filling that is rich with ground almonds, soft and moist paired up with those delicious apricots.. ummm... with some of it's edges crusted and almond flakes is definitely a summer treat! A treat for someone who will need to go back to work tomorrow.. hehehe...

I would say that this is a delicious afternoon tea snack or great with parties...If I am to sell this, it will be RM85... A steal for something soo sooo sooo good!!

Jam Slices

Another variant I came up with using my Roselle jam. I got this idea from those traditional slices of cookies using shortcrust pastry at the bottom and a layer of jam with sweet coconut topping. However, funky me decided to change the shortcrust pastry slightly to give it a more melt in the mouth texture that will blow your mind off with a generous layer of tangy roselle jam. As for the top, instead of using coconut and sugar and what have you as topping, I decided to top this with another layer of pastry and a generous handful of almond flakes. The result??

Awesome!! Addictive!! Dont say I didnt warn you..

Prosperity Cups - Roselle jam variant

My roselle plants have been fruiting like there is no tomorrow!! and with that, I have so many bottles of roselle syrup and tubs of jam.. plenty of tubs. I have been distributing these 2 items all over the place. Hehehehe.. and comments received were very positive. The syrup was well received by the kids and the jam was enticing to the adults. But with my giving away exercise, I am still stuck with plenty tubs of jam so, I came up with this...

Prosperity cups! Hehehe!! one Chinese New Year I made this very pretty and exciting tart which I name it prosperity cups. Basically, it is a very light and crispy pastry with jam in it.. The contrasting texture is very enticing.. the light and crispy pastry meets the sticky and slightly chewy jam.. Yuummms!!

The unique thing about this is the jam. It's tangy but yet not tart.. very pleasing and blends well with the pastry.. simply addictive! You will not stop at one..

I have yet to think if I wanna sell this.. hehehee.. I might just be selfish and keep this all to myself.. because I love it very much! Woo hoo..

Pastry - Humble Quiche

Sometimes when I am in the mood, I will whip up a quiche or two and have them for dinner. I like my quiche rustic and simple.. not with plenty ingredients.. just simple ingredients like tomatoes, mushrooms, onions, cheese and of course egg..

I made this for a concert recital that my daughter was performing and when it was time to eat, the kids whalloped everything.. onions and all.. it's always a happy time to see kids eat everything! Hehehe..

I suspect the combination of nice buttery pastry that's flaky with the smooth custardy egg filling and all the nice crunch from the vegetable simply make it yummy for kids. (ok.. adults too!) Hehehe.. I must say that this is a comfort food..

I usually sell these quiches at RM5.50 each as they are packed with fresh slices of mushrooms, tomatoes, onions and 2 types of cheese. A minimum order of 10 pieces are required.

Gong Xi! Gong Xi! Gong Xi...

This is Kueh Bangkit.. I have been selling this for the last 2 years and the response has always been overwhelming. This is sold at RM26 per container and believe me that there are a lot in that container..

Biscotti.. Almond biscotti actually. This is my new creation for this Gong Xi Fa Cai season. It is not hard to make.. but I need to borrow my friend's slicer to do it. Commercial slicer that is.. Hehehe... yes, the steps involved is a bit tedious but the result is well worth it.. it produced thinly sliced biscuits that are crispy and addictive! This is sold at RM24 per container.

Tarts!! Yes, pineapple tarts... this year, I have decided to do rolled up tarts instead. Reason being is cost. The usual open faced tarts are more expensive to make and with the ever raising cost of goods, I doubt anyone will want to buy those tarts. Where else, this cost lesser to make and since I was able to come up with a pastry that is light and doesnt coat the tongue, I was excited to make this for sale this year! This is sold at RM32 per container that will have approximately 40-42 pieces.

With these yummy cookies, I am all ready for Gong Xi Fa Cai!!

My Lunch - Roasted Garlic Tomato tart with rocket and basil

Decided to have smething different for lunch today and made this using filo pastry with Gruyere and moazarella cheese with lots of rocket and basil and juicy tomatoes. It's relatively easy to make, the only tedious part is the lining of filo pastry but it is all worth it as the whole makeup is simply delicious!

I have a feeling that this is superb for parties and tea... Hmmm....

Pastry - Prosperity Cups

Look what I did with all the fruit jams I made recently. Hehehehe...

I made some shortcrust pastry cups and filled them with jam. The 3 stripes top is filled with pineapple jam, the cross top has a generous dollop of citrus madness jam and the hexza top is filled with kumquat jam.

The verdict is...very very good! The shortcrust pastry is very crispy and light and most definitely go very well with all the different jams..

Dong! Dong! Drrronng! Chiang... CNY Cookies

It is a busy time for me now... all the baking and cleaning is making my head spin! Wooo hooo.. In this picture, you see the ever famous pineapple tarts and new funky cheesey cheeky biscuits.

Pineapple tarts.. my favorite CNY snack.. the pineapple mustnt be too mushy or soft or blended.. it must have some bite in the jam. As for the taste.. I definitely am no big fan of sweet and nothing else but sweet tasting jam. There must be a balance of sweetness and pineapple tanginess. And the pastry, oh.. pastry is everything in jam tart.. it must be light and melt in the mouth without that heavy coating on the tongue feeling. Combine them together, you will get great pineapple tarts....so, try and imagine the work needed to make awesome tarts and that's why I charge a bomb for it.. RM24 for a box of 24 tarts..

The cheesey cheeky biscuit is what I made for fun.. I wanted something different.. something savory and this biscuit simply fit the bill. If tart pastry is light and melt in the mouth, this biscuit is crunchy and crispy. Hehehe.. opposite attracts? And the best part is this biscuit is so full of cheesey flavour.. Yummms!!

Hahhahaha!!! Another attempt to finish off all the bananas at home.... A very seductive chocolate tart with lots of banana slices and a good slosh of rum! Yes... rum is needed to give this choconana tart something to OOOO about. Another yummy ingredient in this tart is grounded hazelnut in the pastry. Woo hoo..

So, can you imagine a tart filled with silky rich chocolate filling and sweet aromatic bananas enveloped in a delicious crispy and light fragant pastry? It is a delirious seduction at RM55...

Pastries - Cheese Tarts

Let me show you Cheese tarts in production....

Cheese tarts ready to be served..

OK... the above is nothing fanciful.. just some cheese tarts that I made but with a Foodelicious! twist.. instead of the blueberries filling, I made mine assorted! Some with strawberries, lemon curd and dark chocolate and the result was.... it all got whalloped/gobbled/whacked/telan-ed/chomped up before I could do a good photography out of it. Hence, I have only those 3 pictures above.. sigh...

Comments for these "tartties" were generally good.. delicious.. yummy but there were also a few who feel that it was simply too tangy (sour la tu) for their liking... Hmm.. perhaps I should make them less tangy and more like those sold outside? What do you people think?

Anyway, these are for sale.. RM3.00 each with a minimum order of 12 "tartties"...

These darlings can be made into a big pie size or easy to eat sizes like those in the not very happening photo.... Each easy to eat sizes are selling at RM6 each. Additional fillings will be entertained at additional cost.
