A Feast Day... A walk down memory lane

When one of my ex school mate called up and ordered a cake for Feast Day, something in me was awakened! It has been ages since I heard of Feast Day. The last time was when I was in school. I went to a Convent school and I was one of the few lucky ones or rather, privileged ones to have been taught and governed by nuns. (yes, you can now narrow my age down.. Hehehe..) And yes, whatever they say about nuns as teachers and headmistress, believe it! They are all true.... They are the most dedicated, hardworking, righteous teachers around and you never go wrong in placing your child with them.. strict is the order of the day!!
Anyway, eons ago, whenever the Feast Day festival comes, usually around now, in the month of March and April, my school then had all sorts of activities. My headmistress, being a nun, instill in us, the value of god fearing, charity, compassion, the joy of giving and in so many ways, entrepreneurship. During this festival, one of the activities would be Charity day.. in accordance to our school's motto.. "Ad Veritatem, Per Caritatem" which means, To Truth Through Charity. It was always a fun time.. everyone will be busy thinking of new ways to do charity.. hahahahaha.. and at the end of the day, all money collected will be used to sustain the school. Yes, missionary schools didnt have much help from the government and we survived.. proudly I must say..

So, today, many decades later, I was asked to do a cake to celebrate Feast Day and when I went on to get the cake ready, all sorts of happy memories ran thru my mind. My gutsy headmistress who called us darlings..who lectured us unconditionally, over and over again about the many values that we must have to see us thru life.. A robust Irish woman who had no fear whatsoever.. who will go direct traffic every day and harassed overly protective parents "your darlings are not going to die if they have to walk further.. so, move along now and be considerate"..The rickety chairs and tables that are so battered but yet tell a thousand tales.. The loads of fun we had in school.. Sigh.. if only I could turn back time..

Yes, if I could turn back time, I would relive my school days again.. to hear the voice of my headmistress lecturing us for long period of time.. to sit at the thinking pond and woodlands.. to enjoy once again, Feast Day ala Sister Enda's way.. To Truth Through Charity.... and this cake is a reflection of this.

Hot & Delicious Cinnamon Rolls!

Made this on a rainy Wednesday evening..... Wanted to have something yummy and fast for breakfast and since it was pouring outside.. what could be more comforting than hot and delicious cinnamon roll?? Hehehehe..

The process is not tedious at all... whip everything up, proof and punch.. leave it to rest, punch and roll.. sprinkle, sprinkle, roll, cut, proof and bake, 30 minutes later, your house smells heavenly and you will have a tray of lovely cinnamon rolls. Of course, commercially, a lot of additional fillings are added.. chocolate chips, cheese, nuts, etc.. the list can be endless. But I like mine just the way it is.. the right proportion of butter, cinnamon and sugar...

And yes, my monster was very pleased with the cinnamon roll I made... she whalloped 3 out of 6 and the balance was gobbled up with a nice cup of hot orange pekoe tea on a rainy Thursday morning.. Life cannot be any better...

My Big Fat Chewy Chunky Cookie - it's awesome alright!!

Yup.. this cookie is a cure all, all time favorite!! yup, good to make when one is depressed and sad because it's so easy to make.. good to eat when one is down and feeling rotten because it taste soooooo goood!!, good to look at and smell heavenly when one is on a diet and have to resist such wicked temptations... Yup! this is it...

This big fat chewy chunky cookie has over the years gone thru many adjustments to arrive as it is today. For one, I cut down a bit of the sugar.. not too much, if not it will affect the chewiness.. added on lovely whole (mind you, not chopped or far far in between) round macadamias and generous handfuls of dark chocolate chunks. Yes, you heard me right.. dark chocolate chunks. I am not a fan of chocolate chips.. I find such tiny morsels very frustrating.. hence, always uses chunks whenever I can.... Hehehehehe...

So, when these chunks of dark chocolate melts into the cookie, it gives a heavenly aroma.. oooo.. and and and not forgetting.. when you sink your teeth into it..OOoooo..... heavenly!! and the nuts.. oooh.. you gotta try this!! The whole nuts just burst into this awesome nutty flavor in your mouth and together with the chunks of chocolate.. one cannot be faulted for thinking that one has died and gone to heaven!!

Yes, just like in any cookie, texture of the cookie is very important.. you cannot discount the fact that this cookie's texture is a winner.. really chewy but retain a light crisp on top simply make one eat till until drop! Hahahaha.,,.

Yes, these are being sold... and I have yet to work out the cost.. because I am busy stuffing my face with this cookie! Hahahahaha.. call to enquire..

Local Kueh - Talam Keladi

Some of the yam plants I have in my garden are ready for harvest and without hesitation, I yanked them out and was trying to figure out what to do with them when I remembered this funky kueh I had awhile ago... It's called Talam Keladi.

It's more or less like Kueh Talam but with a twist! Hehehe.. the salty part is at the bottom for this kueh while the sweet part is at the top. Opposite of Kueh talam! Anyway, the best part of this kueh is that it's relatively easy to make. The only difference is that I reduce the salt and sugar amount for the kueh and didnt use a large sheet of plastic to steam the kueh. I am a firm believer that plastic and heat spells TROUBLE. So, no.. no plastic if I can help it. The set back about not using a large plastic sheets to line the cake tray during the steaming process is that you will have to sacrifice a few initial pieces of kueh to give space to scoop out the kueh. Well, if that is the only sacrifice, I gladly do it..

I like this every much.. hehehehehe.. The flavor is very aromatic as the yam is really very good. Yes, you need to get good quality yam that's fluffy.. and the coconut milk used for the bottom later simply is addictive. The reason being, it's not too rich thus making it creamy and aromatic without having that "stuffed up" feeling.

If you ask me, I am going to sell this! Hehehehehehee... for those interested, call and enquire.
