Sunday Storm...

The weather has gone wonky lately.... The mornings are bright and sunny with lunch time blazing hot with heat to kill and as the hands on the clock move to afternoon, the sun blaze hotter and brighter, with all its might! And suddenly in all its brightness, you will hear this rumbling.... and before you know it, the blazing hot and bright sun suddenly give way and within a few minutes, the whole place will turn dark with the rumbling grows louder and strong wind whipping up everything...... and before you say anything.. the storm make its appearance in style!

You will never have thought that the bright, sunny and hot morning, with laundry drying up within half hour will end with torrential rain and wind that blow everything away. The picture above captured the strength of the storm than blew my way.. "rocking" my banana trees terribly! Even shutting the windows dont help as the rain pelted the windows with its strong and big droplets.. as for the lightning, it can be so violent that it once blew up some wire in the substation and I had no electricity for a good 4 hours! Oh! what a storm.. Oh!! I like! Hehehe.. I am a storm lover.. I love the power of such storm.. I love the ability of the storm to cool down the temperature drastically within minutes.. I love the coolness and a sense of cleanliness once the storm is gone.. The calmness after the storm is also very seducing.. hehehe...

I captured the above picture while having a hot cup of tea after a tedious and tiring but satisfying weekend of catering....as I sipped my tea and enjoy the whole works of the storm, it suddenly dawn upon me as to what the storm reminds me of...it reminded me of my temper.. hahahaha..... oh well, it will take a lot to work that kind of "storm" in me.. and yes, when the storm in me is worked up, it will put the above to shame.. Heh! heh! heh!

Raspberry & Cream.....Jewels!

Remember I said that I will be creating a lot of new flavors once I get my hands on these yummy new flavors from across the little sea?? Hehehehe.. so, here we go.. This is my first creation... Raspberry & Cream...

This is one flavor that I have always wanted to have but couldnt find it over this land and when I found it across the little sea down south, I grab it! Hehe... the flavoring paste smells simply heavenly.. very natural and the best part is that it doesnt color, so, I can actually add my own coloring. Hehehehe.. Anyway, I am very cautious about flavoring..they are unpredictable!! They can smell heavenly nice and sweet but when you add them into your food, it might just turn into something else! I think it's all about chemistry... hmmm.. Anyway, I only wanted a hint of the flavor so, I was careful not to add too much... a slight hint will entice and tempt the palate.. but a strong dose will just remind the mind of cough mixture! Hehehee..

So, these little delicate morsel of macarons are delicately flavored and paired with rich and creamy cream cheese frosting with a twist! A little lemon is added to give it an addictive edge and a hidden treasure of raspberry jelly is added to give it a jewel effect.

These are sold at RM3.50 each with a minimum of 20 pcs..

Princess & Fairytales

With the current Royal Wedding fever building up, every young girl's dream is to be a princess and have fairytales..aaaaaahhh... I have quite a few orders for such theme!! Watch out for my next creation.. Casle and princess! Anyway, back to my story, I wish life is as simple and plain like fairytales. I recently watched the wedding of Princess Diana and Prince Charles and noted how blushing and radiant and happy the bride and groom were... yes, watch it to see that Charles didnt look like he is sad or didnt want to marry Diana. I suppose at that moment, he did! but for some reasons only known to them, he couldnt sail the storm of life... so, even the royalties are not spared of the reality of life.... Aaaaahhh..... life!!

Anyway, the above is the request of a 5 years old girl.. She wanted Princesses and fairytale.. hehehe.. and specifically chocolate and must be pretty! Hahahahahaa... And her wish came true.. a set of rich chocolate cupcakes with orange cream cheese frosting.. yes!!! wanted to try something different.. hence the orange and cream cheese frosting and my! oh! my! it is explosive!! The frosting is tangy but not tart.. sourish and blend well with the taste of cream cheese making it light and fun to eat.. and together with the cake.. it was awwweeesooommeee!!!

This set was sold for RM6.00 each with a minimum of 16..

A pot of flowers

I had to do a birthday cake for 2 beautiful ladies with not much clue as to what these 2 ladies like or interest are... so, for a week I played around in my head as to what I wanted to do.. Notty cake? Hehehe.. ahhh.. cannot be done as there will be children and old folks.. So, as the deadline draw nearer, I grew desperate! Wahahaha... What can I do for 2 ladies that I have never done before!?? WHAT!??

The good thing about such orders is that I can get creative and come up with something I have never done.. hence, increase my portfolio in here.. The bad thing is sometimes I get too creative and nothing comes up! Hahahaha... Anyway, I was still thinking about what to make on the day I was suppose to make.. at the end, I thought a nice tall cake with flowers would be nice for 2 ladies.. hence. this is an eleventh hour creation!! Hehehe..

This cake is a sandwich cake.. vanilla butter cake sandwiched with lemon curd. I had to sandwich the cake as I wanted the cake to be tall.. and didnt want the cake to spend too much time in the oven, hence, 2 pieces of cake pile on top each other.. It was a simple cake but the decoration work was tedious.. every strip of 2 different shades of green was paintakingly rolled out and stuck to the cake piece by piece... and the flowers.. oh! I must tell you about the flowers. It was raining horses when I made this cake and the earlier batch of flowers flopped and went all limp. I had to remove them and improvised.. instead of daisies, I had to change the flowers to something simple but pretty... at the end, thank GOD I was able to get all the flowers to stay on the cake and not flop off or go limp... The weather here is always a challenge!!

Anyway, the buyer had no idea what I will come up with and I was eager to see her face... Hehehe.. she was stunned! She didnt imagine the cake will be so unique and in her words.. So beautiful!! Hahaha.. she was toying with the idea of not giving the cake.. hiding the cake.. hehehe.. too pretty to be eaten! I could see that she was extremely happy with the cake as she paid RM260 for the cake.. By the way, the cake weigh in at 2.2kg. Not that small afterall.. hehehe..

A day off from work and some Gamja Jeon...

I first saw these cute pancakes on Terry's blog (www.hungerhunger.blogspot.com) and was immediately enticed to make them but of course, I needed help to finish them so, didnt make them until now... hehehe...as I finally found enough kakis to help eat them..

What I love about this pancake is that the ingredients are not rigid... I can put whatever I like.. and since I love vegetables, I had some chives, spring onions, onions, carrots, chilis, yellow capcicum, potatoes and buddha gourd with some fresh prawns. The method of making was also simple.. just dump everything in, add egg and flour.. stir and fry. What more can I asked for...

As for the taste... I must say it is yummy! Very veryyummy... especially with chili sauce. I didnt make the soya sauce thing since I am not a big fan of soya sauce. Every bite of this was crunchy yummy vegetables and I was surprised that it wasnt as oily as I thought it would be... I have this fear of flour and oil.. they seem to love each other and everytime I sink my teeth into such thing, the oil will squirt out in my mouth.... eeeyyyeewwww.. but for this, it was not like that..

So, with my friend over, we polished off most of this pancake for breakfast.... My friend was so amazed that these are made from vegetables and yet taste so good... Heh! heh! heh! I think this is a good item to have if you are thinking of getting anyone to eat vegetables....

Asam Laksa... A Penang Love Affair...

Nothing beats a great bowl of asam laksa. It is not easy to find a satisfying asam laksa nowadays..I guess people dont make them like they used to.. with lots of fish.. with lots of herbs.. and one must be very generous with these ingredients.... so, since I am such a fussy pot, I decided to make this... and share it with some close friends.. hehehehe..

The pounded ingredients are naturally, pounded... and herbs are plenty..you gotta be very generous with the herbs.. if not, the broth will not be fragrant and I learnt the trick from my aunt.. you gotta put in "secret" hehehehe... so, after an hour or so of a lot of blup blup blup sound from a big pot, the broth is ready.. and off I go to get the garnishing ready and there are a lot of things to cut!! I hate cutting!!! The onions, the cucumbers, the bunga kantan, the mint, the pineapples... wahhh....

But once everything is nicely cut, I am very pleased with my bowl of asam laksa.. I learnt that you must balance the taste between sour, spiciness (pedas), sweet and savory.. it is not just sour or pedas.. it has to balance the scale and when you mix everything up, it is a very yummy bowl of noodle that spells effort and precision in taste. Of course, the prawn paste is a must and it helps.. without it, the balancing act cannot be achieved. As my friend's husband put it... this prawn paste makes a whole difference!! Oh yessss.....

So, my Sunday was spent with great friends and great bowl of asam laksa... nothing can be better than that.. Not even a 5 carat bling! Thanks May Lyn for graciously offering your house for us to crash and have this asam laksa party...

Oh! if you are wondering, yes, I do make this for my catering.. and if you want to have this party, you can call me...... hehehe..

Almond Jellies - An old time favorite..

Ok... this is something I always wanted to try.. I always wanted to order in chinese restaurants but my family will stare and glare at me.. they dont like such things.. for one, it is made of milk and milk and my family are not exactly "pally wally".. next is the almond taste.. they say it taste like bugs.. like they have ever eaten a bug or croackcoach.. well, anyway, I am patient.. hehehe.. and finally, this week, I made my chance to make this for a small party I was going to.. I cant be going with nothing right.... so, a recipe of almond jelly made me a very generous guest! Hehehe..

I did change a few things with this.. I decided not to use evaporated milk because I wont be able to finish the whole can and I dont like the "not here not there" balance of the milk in the tin... and.. I find Malaysian evaporated milk rather very yellow.. it is not white and almond jelly is suppose to be white! It has to be white!! So, I change to using fresh milk.. and I decrease the amount of almond essence.. yes, wouldnt want my host to choke on the bug's life smell.. wahahaha..

The result was splendid!!! it was a bit too sweet for me and I shall adjust the sweetness in my next adventure... other than that... the texture was great... I made this softer.. since it is in individual containers. So, if anyone out there is thinking of having this... call me.. I am selling this.. it is most definitely very very yummms!!!

Strawberry Yogurt Chiffon.. Another bouffant creation...

My friend wanted something different...With a bad throat and cough, she wanted something light and refreshing and I come up with this! Hehehe.. I just wanted an excuse to create... and she gave me the perfect excuse! So, with some yogurt, some fresh strawberries, I made this chiffon cake..

The taste is fab!! For one, it has yogurt.. so, it was something very appetizing.. for another, it has strawberries... Frankly, I think the US strawberries will be nicer for this cake as it will add a more vibrant and fragrant aroma to the cake... but unfortunately, all there is in season now are korean strawberries.. and I find them not suitable for cake.. anyway, thank god this turned good.... hehehehehe..

So, my dear friend with a bad throat and cough had her treat... a very refreshing treat! hehehehe...

Cacao & Orange Daiquiri - A Refreshing French Macaron Affair

I wanted something exciting with my chocolate macarons.. I wanted something that is earth shattering! Hehehe.. at first, I wanted to pair these chocolate macarons with something unusual like chilies..yes, you heard me.. chilies. It's a rage in europe!! chilies and chocolates are the most happening thing since platform shoes... hehehe.. but since I was out of chilies and have yet to do my little research on what chilies to use, I ransacked my fridge for something I could use to make the cream and lo and behold!! I saw something I know it will give my chocolate macarons some excitement...

It is an orange.. the skin was so orange and fragrant and I know the fruit is juicy with the right balance of sweetness and tanginess.. I also know that orange and chocolate is like day and night but they are meant for each other! Hahahaha.. so, off I went to create an orange daiquiri cream.. it wasnt easy.. I had to balance the consitency with the sweetness and tanginess.. I like it really tangy.. really citrusy orange.. not just flat out sweet.. but with a balance of sweetness. So, after an hour of mixing.. I got this cream... a cream cheese base flavored with a very zesty and citrusy orange flavor... Delicious!

And together.. it is refreshing and delicious! Together, they make a happy pair.. hehehehe.. again, such pair are addictive... at RM3.50 each for a minimum order of 20!! Yay!!

This!! This is addictive! This is an awesome combination... Didnt I say Rose is a very very versatile flavor.. This reminds me of a local love affair.. a marriage between something english like a rose with something local like lime. The lime cream is a self created cream.. hehehe.. using my lime curd and home made buttercream... the taste is exciting, heady and addictive... and together with Rose, they make a pair of happy couple! Hehehe.. and yes, that dark pink streak was added intentionally.. to make it sexy of course!

Rose & Chocolate - A French Macarons affair...

Ok.. this is not one of my best creation.. I am not sure if it is the egg whites or is it the weather.. it was extremely dry and hot yesterday, so, perhaps that could the reason for this batch of Rose macarons not turning out the way I wanted them to. Sigh.. one cant be perfect..

Anyway, I will try this again.. because I like Rose.. I like the color and flavor.. I think Rose is very versatile.. it can be paired up with a lot of things and still maintain its signature without overpowering its partner... Just like this creation.. I paired it up with a velvety chocolate ganache flavored with rum.... the taste is simply DIVINE!! The rose flavor is delicate and it compliments the strong and smooth taste of chocolate ganache with rum..

These are sold for RM3.50 each with a minimum of 20 pieces.
