Simply Doughnuts!




I like my doughnuts the old fashion way... the makcik way.. full of bite, full of texture and coated with lots of sugar. Yes, I am quite an old fashion antique! Hehehhee.. And since, such old fashion doughnuts are hard to come by these days, I decided to make them myself. Yes, I am no fan of those fanciful doughnuts you can get at shopping malls... I find them too soft and airy and nothing but sweet tasting. There is no bite to it and most importantly no satisfaction.. Sigh..

Anyway, my daughter had her friends over and it was a great opportunity to make doughnuts. It was very easy to do, no machines, no gadgets, no nothing but my hands and time.. Mix everything up, pull and push the dough with all your might, yes, stress relieving time.. and let it rest. When it has risen to double its volume, punch it down, knead it a bit, roll it out and cut. Proof for the 2nd time and when they double up their size again, fry them in vegetable oil. Lastly, coat them in sugar and cinnamon and see the kids whallop them with such gusto! Aaaaaahhhh.. Happiness.

The only tiny bit of set back is that these doughnuts are not sweet at all even though there is a generous coating of sugar all over. So, the next round, I will add a little bit more sugar into the dough and make it a little bit sweeter and perhaps, can spin out some really awesome spice trade doughnuts. Yes, I am thinking of adding some spice into the dough and maybe have something funky. Stay tune for it...

Opposites attract! A chocolate with Tangerine Mousse cake




Yes, this is an opposites attract creation! Dark and pale, rich and light, sweet and tangy.. It is most definitely more than yummms for this cake.

The fact is, I have always wanted to marry chocolate with Tangerine and yes, was itching to do this cake for the longest time.. So, when the opportunity came to make this cake, make I did!!

It is a fairly simple cake of chocolate sponge and tangerine mousse but the trick is the layering. It took quite a bit of "skill" to layer the sponge and mousse and I am glad I did it quite nicely. Hehehehe..

As for the taste, I must say, the dark and sweet chocolate sponge compliment the tangy and smooth but light tangerine mousse.. some people may not like it because the tangerine was a wee bit too tangy this time but oh well, I like it. A very refreshing change from the usual sweet cake. Something really awesome to eat during this hot, humid and irritating weather...

French Macaroons - Vanilla with salted caramel filling




French macaroons are different from the macaroons I have always made. The difference is these macaroons have some form of grounded nuts in it and normally, it is almond. For this variant, I thought I will stick to a plain macaroons and let the filling shine! Hehehehe.. I made the most easy but terribly addictive salted caramel.. and I am so proud of it!! Now, you know why I made plain macaroons?

Anyway, back to the macaroons.. I am very happy that I was successful on my first attempt at this and was very surprise that it was super easy. The macaroons has a very delicious but delicate, egg shell-like crust that yields to a moist and airy interior. I can eat these macaroons just like that without the filling! It is so yummy!!!

As for the filling, the salted caramel is luxurious! The texture is simply smooth and the taste is very addictive. The recipe says try not to drink it.. restrain yourself! And I now understood why. It is rebelliously awesome and I nearly couldnt restrain myself... even though I dont have a sweet tooth.

So, combine these two together, it is most definitely kick ass awesome! I let the pictures speak for itself.. Yummmms! Yummmms! Yummms! Yummmms! Yummms!

3 monkeys and a waterfall!





The birthday boy was very clear in his instructions.. waterfall and big tree.. Unfortunately, I couldnt accommodate the big tree as I was afraid the big tree will topple over and ruin the cake. Hence, the small small tree and since I couldnt put in the big tree, I added some of the boy's favorite things.. monkeys, mushrooms, pebbles, rocks and sand and the whole works of a waterfall theme.

The birthday boy was a bit disappointed not to have a big tree but nevertheless, he was grinning when he saw his cake. He was protective of his cake too! Shelling out precise instructions to the cake bearer aka his sister to be careful.. dont do this and that! Hahaha.. he is such a cute little fella.

Anyway, this cake is a moist chocolate cake and there are 4 layers altogether. These layers are sandwiched with a white chocolate ganache and since the mother of the boy is not keen on butter icing, I have used white chocolate ganache to coat the cake. The total weight of this cake is a whooping 4.8kg! And yes, it also cost a whooping RM410. The extra charge is for the white chocolate ganache...

Wicked Treats - Treasure bars...




This is wickedly delicious!! Very wickedly delicious...

It has a bottom layer that is a mixture of chopped hazelnut, graham crackers and chopped almonds binded together by rich melted chocolate mixture. Then in the middle is a thick slab of saltish peanut butter that is goeey and melt in your mouth. This is lastly sandwiched by a fairly thin layer of rich melted chocolate..

It is quite like eating Reese peanut butter bars with a little twist! The original recipe calls for Himalayan salt but since I dont have it and dont intend to buy it.. I used normal salt.. and the taste is very addictive.

Strawberries & Cream - Heavenlicious!




This is something I thought about doing for the longest time but didnt have the time to do it until now... Yes, after CNY, things have been easy for me.. a few orders in a week and all are just repeat of cakes from this blog.. Hehehe...

Anyway, I made this in a jiffy yesterday.. got home and started with the sponge cake and while the sponge cake was baking, I went on to create the strawberry mousse...

This cake is very refreshing and the taste of strawberries is so strong.. Yummms! I must say that this is a perfect afternoon cake in such hot weather.. light and sweetish with a delicious tangy hint. This cake is sold for RM95.
