Foodelicious!

This is a must have for parties!! To me, parties must have something pretty sitting on the table for everyone to adore and when it is time to dig in, it is something that one cannot get enough of. Trifle is basically layering of, usually, sponge cake or madeira cake generously loaded with a fruity syrup and kirsch with custard, fruits and sometimes jelly all nicely decorated with cream.

In this Absolute Attraction Chocolate Trifle, I have 1 layer of chocolate swissroll nicely drenched with lightly sweetened dark cherry syrup with kirsch with 1 layer of home made custard that is light and silky and that 1 layer dark pitted cherries and chocolate curls and I start from the beginning.. 1 layer of chocolate swissroll...... layers of luxurious yummy treats..until I reach the brim of the bowl....and that's when I decorate it with whipped cream and toasted almonds and again.. dark pitted cherries.

This dessert is best eaten with friends sharing great moments at RM140....

This is made of sugee cake with the full works.. marzipan and fondant. Marzipan is almond paste, and yes, it's home made almond paste..meaning I made it and I decided not to have those almond bug smelling essence. Instead, I replace it with something more pleasing and I reduced the sugar content quite a bit.. making it addictive! Heh! heh! heh!..

I remember last year I blogged about my "tong yuen" at work.. Hahaha.. what a rush it was.. I had to take the picture in the dark before rushing off to work. This year, it is much better. I didnt have to rush. I had all the time in the world to make the "tong yuen" in the morning and take picture when I am all ready. Heh! heh! Heh! not bad after 1 full year eh.

See!! see!! see what I got?? My Christmas present arrived from a snowflake town.. Yipppeeee and I am so thrilled...

I shall be sipping my tea and having my treats.. Thank you to my dear friend from London who had made the extra effort to go hunt the tea, pack them up and ship them over in the snow in time for Christmas....

I was a bit adventurous recently and decided to make these terribly yummy spicy chicken pie.. These are mini actually but they are really good for tea or parties.. (these were ordered by a lady for her theatre & drama school function) Anyway, back to these yummy pies.. hhhmmm...

The usual puff pastry with cubed potatoes and chunks of chicken fillet nicely spiced up... Every bite you get a mouthful of pastry with flavorful potatoes and chicken fillet.. The aroma of the spices just go so well with something like puff pastry.. crispy and light..

It was sunny but breezy today.. and I am just lazing around in my garden looking at my plants and a very butchered frangipani tree. Yes, it was the time again to prune and trim the tree.. Everytime I have the gardener do that, I am reminded of what GOD said in the bible.. there is a time for everything.. Time to flower, time to grow, time to fruit.. time to rest... Anyway, since I am lazy, I decided to make a simple dinner.. stir fried spinach and har cheong kai aka prawn paste fried chicken..

Yes, I was all curious with this har cheong kai aka prawn paste fried chicken because my nephew, a cute little 5 year old told his dad that he will marry anyone who can cook him this dish! Hahahaha... so, with my little adventure streak.. I made har cheong kai.. and very frankly, I find it a bit too salty and being not a big fan of fried chicken, I find it a OK dish.. however, my monster loved it! She loved the saltiness and prawn paste flavor. Maybe it is the eating in the garden that affected that decision!?? Hmmm...

So, a breezy sunday evening with har cheong kai.....

I have always wanted to have a yule log cake for Christmas when I was a young child... but never had. So, it has always been my hidden desire to have a yule log cake.. Heh! Heh! Heh! to eat when I was young and to make when I am older...

Recently, I had a Christmas party catering and the english lady wanted a yule log cake! Hehehehe.. my opportunity came! This english lady was very specific with her yule log cake.. it must be a chocolate sponge cake with light but creamy buttercream... and, she wanted it white to have that snowing feel...

So, I used my trusted sponge cake recipe for this.. a sponge cake that is all eggs and no chemicals or enhancer or stabilizer.. just loads of eggs, sugar and flour.. yes, making sponge cake is a skill and one has to practise and practise to get it right...(that is if you want it all original and no chemicals).. and again, it is a skill to roll the sponge cake before it cools down to get a perfect roll...

As for the butter cream, well, I am very fussy with butter cream.. I absolutely hate those commercial butter cream... it has that oily and sweet to death tastel eaving the mouth feeling all yucky. So, I have been trying out all sorts of butter cream recipes whenever I am free.. and finally found this recipe.. and yes, I made some adjustments and viola! it is very good.. Creamy and luxurious and the best part, it is not too sweet..

Marrying these two... and I got a beautiful yule log cake!! The sponge cake was soft and moist and went very well with the buttercream.. The taste was very enticing and the whole look just makes me feel very christmasy!! Hehehe..

And yes, the english lady called to say that everybody "ooohhh.. ahhhh" in the party when she took out this cake. Needless to say, everybody had a piece of the yule log and some went back for more. So many times more that she is ordering this yule log cake again! This was sold for RM85.. yes, with all the traditional tacky xmas decoration... Fra lalalalalaa..

Audrey's aunt wanted to get her a set of cuppies for her birthday but didnt quite know what design... "Audrey likes books. You think up the design and it must be simple..." So, the design is a tree of knowledge and some books and a worm.. a bookworm... Hehehe..

This set of Sesame Street gang cupcakes are in vanilla and was sold for RM5 each. Yes, Reymi wanted his favorite gang to be present on his birthday!!

This is a chestnut cheesecake.... Well, the story is that I saw these really huge and delicious looking chestnuts in the market and couldnt resist!!! The chestnuts were just calling out to me.."buy me! buy me!"

So, I lost the battle and bought the huge and delicious looking chestnuts... boil it and had a great time eating them. They were very luxuriously yummy.. sweet and creamy. Hmmm... however there is just so much I can eat and there are still some leftover looking at me.. and that got me thinking....tick! tick! tick! tick!

And this is what I made... pureed the chestnuts.. mix them into a dense cheesecake recipe and for added fun, added some chopped chestnuts at the base.. bake it and viola!! I must say, the chestnut flavor isnt too pervalent.. just a right amount in taste and flavor.. it made the cheesecake even more luxurious..but not in a gooey thick and hard to eat type.. It made the cheesecake a yummy treat!

I should think this is quite good for people who like a cheesecake with no frills.. You know, no whipped cream, no fancy deco or funky methods to make.. To me it is good for afternoon tea parties..

Try it.. this is sold only during this chestnut season at RM90... After the season, I dont think I will be selling this as commercial chestnut puree cost more than both my arms and legs!!

The buyer of this set of cuppies wanted to cheer her brother on his 40th birthday and she wanted everything to be 4 0! Hahahaha.. so, I made everything about 40 in different ways.. 40, forty, FORTY, 40 with the red circle like those speed limit signs.. 40 all over.. hahahaha.. It was fun!! So, turning forty can be a lot of fun...

It's the most wonderful time of the year... yes!! it is my favorite time of the year again and I am doing my favorite things.. making pretty xmas cookies!! This year I have decided to flavor the dough with something zesty.. hehehe.. And as for gingerbread man, this year I have decided to make my own ground ginger and nothing beats home ground ginger!! These gingerbread man is awesome.. addictively awesome!! Try them..

I had plenty of egg whites sitting in the fridge and thought I better go do something with it.. Hehehehe..so, I made some lavender macaroons! Yes, the french macaroons that everyone is so crazy over....
